Egg Fried Rice

This was the first time I tried egg fried rice.. It came out good. Perfect for the days when you feel like eating a fulfilling one pot meal without much work. 


Number of Servings - 1-2
Ingredients:
Eggs - 2
Jalapeno - 2
Red Onion - 1
Basmati Rice - 1/2 cup
Red Chilli powder - 1 tsp
Turmeric powder - a pinch
Freshly ground pepper
Olive oil

To Temper:
Mustard seeds
Urad dal

Procedure:

1. Cook the basmati rice and keep separately. 

2. Heat oil in a wok and splutter items to temper. Add the jalapenos and onions and saute. Add salt and red chilli powder.

3. Separately break the eggs into a bowl and beat them. Add the turmeric powder, pepper to the eggs.

4. Now add the eggs to the wok and scramble it

5. Once the eggs are cooked add the rice and mix everything together. Add olive oil to the rice and mix well. Yummy egg fried rice is ready!
