Easy Vegetable Biryani - Day 3

Okay.. so I've been blogging for three continuous days :) after a lonngggg time. The challenge is working up a little bit.. good.
This is an easy vegetable biryani. I make it with fresh vegetables and sometimes frozen vegetables if there is less time. The procedure might read long... but trust me.. its very easy!!



Number of servings - 2-3
Ingredients:
Mixed vegetables - 1 cup
Onion - 1
Yoghurt - 1/4 cup
Basmati rice - 1 cup
Water - as needed (1 cup rice = 2 cups water)
Turmeric powder
Garam masala powder
Spices (cloves, cinnamon, bay leaf)
Salt


To Grind:
Podina (mint leaves) - 1/2 a bunch
Coriander leaves - 1/2 a bunch
Green chilli - 1
Ginger - 1 inch
Garlic - 4 big pods
Cashews - 4 to 5


Procedure:

  • Wash and soak the rice in water for 30 minutes
  • Make a paste of the items to grind (if you don't have podina, just use coriander leaves
  • Heat oil in a kadai  and saute the spices. Then add onions and tumeric powder and saute
  • Add the vegetables and saute (not too much since they cook along with rice too)
  • Add the paste and saute for a couple of minutes and add the yoghurt. Then drain the soaked rice and add it to the kadai mixture and saute just until the rice heats up
  • Then transfer the rice to rice cooker and add 1 1/2 cups water (as 1/2 cup comes up from vegetables and yoghurt)
Aromatic biryani is ready!.. goes well with raita (I love cucumber , green apple raita with this ~ that will be in my posts soon :))
