Chettinad kathirikkai kara kuzhambu (Spicy!!!) - Day 2

This is my alll time favorite!!! So here goes the recipe of Project blog 30 - Day 2


Number of servings: 2-3
Ingredients:
Eggplant - 3 (big)
Onion - 1 (big)
Tomato - 1(big)
Garlic pods - 7-8
Tamarind - lemon sized
Red chilli powder - 2 tbsp
Coriander powder - 4 tbsp
Gingely oil
Salt - to taste

To Temper:
Mustard seeds
Fennel seeds
Fenugreek seeds


Procedure:
  • Heat a spoon of gingely oil and saute the eggplant till brown and keep aside
  • In kadai heat gingely oil (I used 5-6 tbsp) and splutter items to temper and add the onion and garlic and saute well until the onions turn light brown
  • Add tomatoes and saute well. Then add the egg plant
  • Add the chilli powder, coriander powder and saute 
  • Add the tamarind pulp and water (little) and salt and let the kuzhambu boil until oil separates.
