Garden Omelet (Indianized)

This is a hit recipe at our home. Definitely kid friendly and absolutely colorful, nutritious, healthy. I like the Indianized version with spices and chilli powder.

No. of servings : 1 omelet
Mixed vegetables (I use all colored bell peppers, carrots, beans)
Mushroom, spinach (optional)
Onion - 1/2
Eggs - 3(1 whole egg, 2 egg whites)
Tumeric powder
Red chilli powder

To Temper
Mustard seeds
Urad dal

  • Heat oil in a pan and splutter mustard seeds, urad dal
  • Add chopped onions and saute. Then add the vegetables, turmeric powder,salt and red chilli powder
  • Once done keep it aside. Break the eggs and whisk it
  • Add the vegetables to the egg 
  • Heat the tawa and drizzle few drops of oil and make the omelet by flipping sides 
  • Grind fresh pepper over the omelet and serve (I like to add the pepper along with veggies)
